Smoothies for Breakfast

Breakfast is my favorite meal of the day, hands down. If I could eat it for all three meals of the day (and I sometimes do) I totally would. With a “allergy-free” diet like mine, making typical breakfast food can be very time consuming and often next to impossible. There is no replacement for eggs in an omelet or French toast, and other baked goods can be done, but just take a while! I make some delicious “safe” and very high protein pancakes on a regular basis, and once in a while we have a big hashbrown, sausage and veggie hash, but on a typical morning I often resort to a smoothie. I love how easy they are to make in my new Cuisinart “bullet” and it is such a great way to pack a lot of healthy goodness into one yummy drink. They always make my often unhappy tummy feel good too.

 

Here are two recipes I’ve been making recently – sometimes they vary based on what we have in the fridge/freezer.

 

PB&J Smoothie

It really tastes just like a peanut butter and jelly sandwich!

½ cup rice milk

½ cup (more or less based on desired thickness)

½ cup spinach

½ cup frozen raspberries, blueberries and/or blackberries

1 tbsp sunbutter

1 tsp  100% fruit  raspberry jam

1 tbsp ground flaxseed

1 scoop brown rice protein powder

 

Green Mango Goodness

½ cup frozen mango

½ cup other fruit (usually kiwis or blueberries)

½ cup spinach

4 slices cucumber

1 tbsp ground flaxseed

¼ cup rice milk

½ cup orange juice

1 scoop brown rice protein powder
