Wait wait wait! I missed National Donut Day yesterday!? Well, kind of. I was fully aware of the “holiday” due to numerous Facebook and Pinterest posts. Unfortunately, you can’t just go pick up a gluten free doughnut (donut?) anywhere, so it takes a bit more planning to celebrate that glorious day gluten free style.
I have a lot of fond memories of donuts. The cake ones. With chocolate frosting. And multi-colored sprinkes. Those. I think the Dunkin’ Donut sign was my first experience with brand recognition…as I used to squeal in the car if we drove by a shop…that began at about age 1. My dad had a habit of taking me on daddy-daughter dates for coffee and donuts and it was one of my favorite things!
I have been wanting to try to make my own gluten free donuts for a while now, but I haven’t gotten around to it until today. Today! Today is the day for donuts! Most of the recipes I found used a doughnut pan, which I don’t own, so I got creative. I used a cookie sheet with parchment paper, English muffin rounds (round cookie cutters work too) and shot glasses. Creativity is key in the kitchen!! This little set up worked pretty good – but I learned a few things along the way:
1. Grease your cookie cutters and shot glasses.
2. Place your shot glasses right side up so they make a smaller hole and are easier to slide out.
Ok – that being said, the recipe I used was delicious. I stole it from one of my favorite dessert bloggers Chocolate Covered Katie.It was her “Cake Batter Donut” recipe. Yum! I love how she always has gluten free/vegan options and all of her recipes are low or no sugar! I had to bake them slightly longer than the recipe called for, but other than that I followed the recipe point on. I used Bob’s Red Mill GF All Purpose Flour. I took her suggestions and tried ALL of the toppings – some chocolate chip, some sprinkles and some cinnamon sugar. I had to make one doughnut hole-less…because I was short on shot glasses!
These little pieces of heaven were the perfect start to a great weekend – add a mug of hot coffee and you’re set!

Thanks for the post! I buy Kinnikinnick donuts from natural Grocer, but these homemade ones sound so much better and more fun!
I haven’t tried Kinnikinnick donuts yet Brooke – but they sure would be a great easy fix if you don’t have time/patience(!) to bake!
